Pumpkin + Chocolate Chip — FALL for these Muffins!!

 After living in Charleston for 2.5 years and now living back in Texas, the visible changes of fall are almost foreign to me. Yet, it remains my favorite season. It’s a season of Thankfulness, pumpkins, cool nights, fall flavors, costumes, rich colors, red wine, woodsy smells, tailgating in the grove (Hotty Toddy) and football… Hello happiness! There is something so moving and nostalgic about the changing of the leaves, especially with an endless view like this one. The fall vistas remind me to stop and reflect on the year thus far and what’s to come. 

This is a view of Grandfather Mountain from Blowing Rock, NC. It is this view that inspired our GG logo and it is this view that always reminds me of how vast my blessings flow. Blowing Rock is where I have spent almost every Thanksgiving of my life. It is my heaven on earth and where I first experienced the joys that a kitchen can bring. My grandmother, mom and her two sisters have taught me that true hospitality comes in the form of fresh breads and homemade gravy. Just like my beloved grandmother, I love exploring new recipes. However, instead of clipping every recipe out of the daily paper as she did, I often turn to pintrest! One of my favorite food blogs is Sally’s Baking Addiction. Her recipes are fun, simple and always, delicious. 

Fall flavors are by far my favorite… so, I wanted to find a yummy pumpkin recipe to share and of course, turned to Sally for inspiration! I landed on a recipe for pumpkin chocolate-chip bread— Um, Pumpkin + Chocolate — you know it’s going to be good!! Since I have a ridiculous obsession with muffins, I decided to try this recipe as muffins and I’m so glad I did.

These are some of the most moist and yummy muffins I’ve ever made… and so easy, too! I took them to Charleston to give as little happies to my special friends and they too thought these were so delicious. I had everything I needed right in my kitchen. I followed the recipe for the bread exactly and was able to pour 16 muffins. After 20 minutes in the oven, out popped these heavenly treats.
